First issued in 1867, Anne Bowman's book, unlike several other well-known manuals of cookery of the time, held no quarrel with the significant encroachments of European cookery. Indeed she quotes Joseph Berchoux (who in 1801 first coined the term "Gastronomie") in his native French: "Je vais mettre au rang des beaux arts celui de la Cuisine" (Roughly translated as "I will elevate the kitchen to the level of a high art"). Chapter 1 introduces various foods: Cod's head, Salmon, Mackerel, Sirloin, Brisket, Haunch of Mutton, Tongue, Suckling Pig, Goose, Guinea-fowl, Rabbit, and more.
