Brown gilt stamped pebbled cloth over boards, 815 pages + 32 pp. advertisments, Index, illustrated by 140 engravings according to the title page (there appear to be 128 figures and 11 plates which add up to 139; where the other engraving is I don't know). This historically important text on brewing beer was first written in German by Julius E. Thausing. It was translated into English in 1882 by William Brannt and was expanded to include material specific to the American brewing industry by editors Schwartz and Bauer: "thoroughly and elaborately edited, according to the latest and most scientific practice, including all the new improvements in the brewing of lager beer introduced into the United States." This book goes into detail about brewing beer and running up a brewery and includes chapters on the guiding principles for establishing, arranging, and carrying on a brewery; brewing materials; preparation of the malt; preparation of the barley for malting; fabrication of beer; fermentation of the wort; beer after the principal fermentation; beer tests. Covers are soiled, front and rear hinges are cracked, some light foxing in the Index, and some scattered very light foxing elsewhere, pages are toned, page 211 has two short tears in the top blank margin and some soil which affects pages 210 and 213 as well; otherwise the interior is clean, no writing or marks, the binding is intact.
