This is a social history of ice, rather than a practical cook-book, covering the history of the use of ice in food and drink from its Middle-Eastern origins through its gradual spread to Western countries. It includes travellers' tales of coming upon iced drinks for the first time.

The last work by celebrated food writer Elizabeth David, this book was published posthumously in 1994. This is the 1996 edition, part of the Penguin Cookery Library, 413 pages.
