Intense use of nitrogen fertilizers in crop culture, and manure from animal feeding operations can be significant sources of nitrate, leading to eutrophication and the excessive growth of cyanobacteria that produces peptide toxins. Nitrite is used to preserve ham, bacon, and some sausages, and can also form in the stomach unless inhibited with vitamin C or other antioxidants.
