When Rose Knox inherited the Knox® Gelatine company from her husband in 1908 she reevaluated advertising methods and concentrated on selling gelatin to the American housewife. Gelatin is bought and used by women, she reasoned, and women are more interested in foods that are economical, nutritious and easy to prepare. She set up a test kitchen and developed hundreds of recipes which were printed on Knox® packages, on leaflets and in illustrated cookbooks meant to educate housewives in the use of a new commercial product. It was through her efforts that gelatin evolved from a delicacy and invalid food into a common household staple. Rose Knox became recognized as one of America's foremost business women. She was the first female member of the American Grocery Manufacturers' Association and in 1929 became its first female director. She was President of Knox until 1947 and remained Chairman of the Board until her death 1950 at the age of 93. This early 1936 edition of a Knox® recipe pamphlet is much more than a cookbook; its an artifact of female acumen in American business.
