Scarce cook book important for American culinary history, written by the woman who established America's first cooking school, in Philadelphia. Elizabeth Baker (later Goodfellow, 1767 - 1851) was married and widowed three times and became a renowned pastry chef and cooking instructor, with a shop at 64 Dock Street in Philadelphia. The city proved to be an advantageous location for her cooking school for middle and upper class young women, being an important port providing access to a wide range of ingredients and with a wealthy Quaker population. Goodfellow was an excellent pastry chef, noted for her lemon pie ("lemon pudding"), and for popularizing regional food like Indian Muffins, Yankee Cake and Sally Lunn cake. Contents include advice for kitchen and dining room, bills of fare for different seasons, and many recipes, brandying fruit, bread & biscuits, carving, coffee & tea, desserts, fish, meats, pastry, pies & tarts, poultry, pickling, puddings, stews, salting & curing meats, soups, vegetables, wines & fermented vegetables and yeasts. 8vo, xiii, 362pp, advertisements [14], in text illustrations.
