Vachon (1860-1929), who was at the time employed at The Transit House in Chicago, a fine hotel owned by the Union Stock Yard and Transit Company. The hotel burned down in 1912. He followed with employment at two other historic hotels: 15 years at the New Harper Hotel in Rock Island and then for a few years at the LeClaire Hotel in Moline. Includes about fifty pages of entree recipes, followed by forty pages of soups and an index. Concludes with an eight-page catalog of cookbooks and hotelier guides published by the Hotel Monthly Press.
