About This Item

Paris: Pilet, 1816. First Edition. Hardcover (Full Leather). Very Good Condition. 2 volumes rebound in modern red leather with added 19th century endpapers. The second issue with the added preface and supplement - lacking the title in volume 1 with a facsimile tipped in (the second issue used the same sheets as the first but the titles were pulled and signed and re-dated by Beauvillier's widow. This one was evidently misplaced.), small tear to the title in volume 2. Light foxing and faint dampstains to the plates at the rear of volume 1. A fine pair overall. xx, 388; 376pp. 9 folding plates of menus, 3 in volume 1 and 6 in volume 2.

Beauvilliers, while not the first, was the first great restauranteur in Paris, opening La Grande Taverne de Londres in 1782. So important that he rates his own section in Brillat-Savarin's Physiology of Taste, where he says of L'Art Cuisinier, "Never before that time had cookery been discussed with so much method and precision."
