Fifth printing, oblong 8vo, pp [2], 118, [2]; parallel text in English and Japanese, 95 photographs, 56 of them full-page; full gray paper covered boards, pictorial dust jacket; light foxing to first and last pages and inside dust jacket, near fine. Takahashi joined the Shima Kanko Hotel at the age of 16, and after teaching himself English and French became a master of French cuisine. In 1971 he became head of Western cuisine, and in 1980 head chef for the hotel. He published a set of three books on French cuisine, each with luxurious photographs of dishes This volume is dedicated exclusively to lobster.
