Takahashi joined the Shima Kanko Hotel at the age of 16, and after teaching himself English and French became a master of French cuisine. In 1971 he became head of Western cuisine, and in 1980 head chef for the hotel. He published a set of three books on French cuisine, each with luxurious photographs of dishes This volume is dedicated exclusively to lobster.
