New York: Charles Scribner's Sons, 1918. xlii, 350 pages. Bound in gray cloth with navy lettering and decorations. Very Good, light wear at edges, scattered light toning, the small bookseller label of Thrums Honolulu rear paste down. The first cookbook to acknowledge the importance of African American cooks to Southern cooking and to explicitly give them credit for their contributions. First published in 1904, the first edition featured illustrations, with a full-page image of corn dodgers and biscuits, and full-page photographic images of African American cooks by Alvin Langdon Coburn. Those illustrations were not published in this revised edition, perhaps because of wartime conditions, and is the only notable difference, (aside from the compiler's Preface to New Edition), in the contents between the two editions.
