Very Good. N.D.. Softcover. Paper cover; ring binding. 75pp. 8.5" X 5.25" Single side printing. Hand typed and copied with hand lettered page numbers. This collection of recipes are presumably from a home cook. There is a single recipe, pg 23 with a penned remark and it is assumed that the author made several copies for local distribution. Written in both narrative and listed ingredient style, there is an expectation that the reader knows her or his way around a kitchen. The Table of Contents describes the contents well, as follows: (Page) 1-5 Appetizers - Punch - Luncheon Ham Rolls - Turkey Dressing; 6-7 Sandwiches; 8-16 Breads - Fried Pies - Tea Cakes; 17-24 Cookies; 25-46 Cakes - Pies - Desserts; 47 - 48 Candy - Drinks; 48-54 Casseroles - Omelet - Loaves; 55- Cinnamon Apples - Souffle - Canapes; 56-65 Salads; 66 - Suet Pudding - Frosted Meat Loaf - Pickled Beets; 67 - Garnishes; 68-72 Vegetables; 73- Watermelon Pickles; 74 - Jelly; 75 - Stuffed Prunes - Easter Eggs for Table Decorations (Royal Icing is not listed but on page 75.) This sampling of recipes gives a since of era when meals were prepared from scratch with easily sourced ingredients. Rolled Stuffed Meat Loaf, Chicken Turnovers, Curried Rice in Baloney Cups, Frosted Sandwich Loaf, Fried Pies. These last two recipes are good examples of expected knowledge. In the Frosted sandwich one must prepare a short pullman loaf of bread for the somewhat complicated three-layered fillings. The last, Fried Pies reminds me of my mother's instructions: "Use dried fruit.... Cook in water until done and fruit takes up water. Mash well. Add sugar, spices to taste. Make pie crust. roll out rather thin. Cut with any size cutter you like. Place a spoon of fruit on one side of circle, dampen edge with water, fold over and seal with fork. Punch a few holes in half circle, fry in oil, (not too deep) but hot, until brown. Turn and brown other side." This is a fascinating collection. No date, no other information just the mind of an excellent cook, on paper. Lots of lines to read between and lots of fun to re-create. ; 8vo .
